Recipe: Dark ‘n Stormy Popsicles
We’ve almost reached the official start to summer, which means that we’re finally entering dark ‘n stormy season! With the evenings at last warming up, it’s time to break out the grill and start making cocktails. While I love a classic dark ‘n stormy, these popsicles are a fun twist on a classic cocktail. I started making these about four years ago and try to make some every summer. They are extremely enjoyable and refreshing on a hot summer’s day! The recipe below makes six popsicles.
You will need:
Popsicle molds (or paper cups and popsicle sticks if you don’t have designated molds)
Gosling’s Black Seal Rum
Gosling’s Ginger Beer
A Lime
Step One
Mix two ounces of rum with the contents of two cans of ginger beer.
Step Two
Let the mixture sit overnight to lose the carbonation. (If you don’t have the time, be sure to not fill up the molds all the way as the cocktail popsicle will expand while freezing.)
Step Three
Squeeze half of a lime, strain it, and add it to the mixture. Try not to add any pulp–it taste much better without.
Step Four
Place in freezer and freeze. They take between 12 to 24 hours to freeze fully, depending on how cold your freezer is and how much rum you’ve used. Enjoy!
